Although fall is my favorite season, I couldn’t help but enjoy the 70 degree weather today! I treated myself to lunch on our balcony with a delicious veggie quesadilla.
The cold, dark and dreary weather of winter often leaves us feeling kind of sad inside, so it’s really important to soak up the sunshine while we’ve got it, and while the temperatures are warm enough to bring us outside.
I wanted to make a quick lunch for myself today, and quesadillas have been my recent staple for such an occasion. They are great because you can use whatever you’ve got to make a healthy and balanced meal.
Here’s what I did today:
I heated the whole wheat tortillas for a minute over medium heat.
While the tortillas were heating, I mixed a ripped up and rinsed piece of chard, some grilled artichokes, and 1 clove of raw garlic.
With one tortilla in my cast iron pan, I added some amazing tomato sauce from one of the local farmer’s markets, and I sprinkled a little bit of organic mozzerella on top.
I piled the veggies on top, added a little more cheese, and put the second tortilla on top.
I flipped after a few minutes, and let each side brown slightly.
The raw garlic is great for boosting the immune system, and it gives the quesadilla a bit of a kick. I apologize to anyone I interact with later, as I may be warding off the vampires, but it was totally worth it for the taste and health benefits!
